Ingredients
  

  • 3 ripe Hass avocados approximately 500g total, peeled and pitted
  • 1/4 of a medium red onion approximately 40g, finely diced
  • 1 medium ripe tomato approximately 150g, deseeded and finely diced
  • 1-2 small jalapeños approximately 30-60g, deseeded and finely minced (adjust to your spice preference)
  • 60 g fresh coriander roughly chopped
  • 60 ml fresh lime juice from about 2-3 limes
  • 5 g sea salt or to taste
  • 2 g freshly ground black pepper or to taste
  • A pinch of cumin optional, for added depth

Method
 

  1. Prepare the Avocados: Carefully slice each avocado in half lengthwise around the pit. Twist the halves apart, then remove the pit by carefully striking it with the heel of your sharp knife and twisting, or by scooping it out with a spoon. Use a spoon to scoop the vibrant green flesh from its skin into a large mixing bowl. The flesh should be creamy and bright green, indicating perfect ripeness.
  2. Mash the Avocados: Using a fork or a potato masher, gently mash the avocado flesh to your desired consistency. Some prefer a smoother guacamole, while I personally enjoy a slightly chunky texture, where you can still see distinct pieces of the creamy green avocado. Mash until it's mostly broken down, with a few delightful lumps remaining.
  3. Add the Aromatics: To the mashed avocado, add the finely diced red onion, the deseeded and finely diced tomato, and the finely minced jalapeño. The mixture will begin to take on a beautiful mosaic of red, green, and white, promising a burst of fresh flavours.
  4. Introduce Freshness and Seasoning: Pour in the fresh lime juice, ensuring it coats all the ingredients, which also helps prevent the avocado from browning. Add the roughly chopped fresh coriander, sea salt, freshly ground black pepper, and the optional pinch of cumin. The aroma of lime and coriander will immediately become prominent, a tell-tale sign of authentic guacamole.
  5. Combine Thoroughly: Using a wooden spoon or spatula, gently fold all the ingredients together until they are well combined. Be careful not to overmix; we want to preserve the texture of the avocado and other vegetables. The mixture should appear vibrant and evenly distributed, with flecks of all the colourful components visible throughout.
  6. Taste and Adjust: Take a small spoonful and taste the guacamole. This is the most important step for customising! Adjust the seasoning as needed, adding more salt, pepper, lime juice, or jalapeño to achieve your preferred balance of tang, spice, and savouriness. The final product should be a harmonious blend of creamy, zesty, and subtly spicy notes, ready to be devoured.

Notes

For a smoother guacamole, mash the avocados more thoroughly. For a chunkier texture, leave some larger pieces. Adjust the amount of jalapeño to suit your preferred spice level. A pinch of cumin adds an optional layer of earthy depth to the flavour.
