- Toast the Bread: Heat the olive oil in a large frying pan over a medium heat until it shimmers gently. Place the bread slices into the hot pan. Toast for 2-3 minutes per side, pressing down occasionally with a spatula, until the bread is a beautiful golden-brown colour, wonderfully crisp to the touch, and releases a warm, inviting aroma. Alternatively, you can toast the bread under a grill or in a toaster until golden and firm.
- Warm the Walnuts: While the bread is toasting (or immediately after, using the same pan), add the chopped walnuts to the frying pan. Toast them for 1-2 minutes over a medium-low heat, stirring frequently, until they become fragrant, slightly darkened, and you can hear a subtle crackling sound. This gentle toasting brings out their deep, nutty flavour.
- Assemble the Toast: Carefully spread a generous dollop of the airy, whipped ricotta over each slice of warm, golden toast. You'll notice how easily it glides across the surface, creating a lovely, thick layer.
- Add Honey and Walnuts: Drizzle the runny honey over the whipped ricotta. You want enough to create glistening trails, allowing the honey's sweet scent to mingle with the creamy ricotta. Then, sprinkle the warmed, fragrant walnuts generously over the honey.
- Finish and Serve: Finish with a pinch of sea salt flakes – this is crucial for balancing the sweetness and enhancing all the flavours. If desired, add a sprinkle of freshly ground black pepper, a dusting of cinnamon, or a few delicate sprigs of fresh mint or thyme for a burst of colour and aroma.
